Inside-Out Cake

1 Butter Pecan Cake Mix
1 Container ready to spread Coconut-Pecan Frosting

Preheat oven to 350˚
Prepare cake pan...either a Bundt pan or an Angel food pan is best.

Prepare the cake mix according to package instructions -- EXCEPT do not use mixer. Hand-stir only. Batter will be a little lumpy, but that is OK. Add in the entire container of frosting and stir to blend. Pour into pan. Bake about 55 minutes or until toothpick comes out clean. Cool in pan 10 minutes. Then invert onto plate. Allow to cool.

It is not necessary to frost this cake (hense the inside-out part -- the frosting is already in it!) However, if you are a diehard I need frosting type, it is ok to drizzle a little softened cream cheese frosting over while still warm. Best served at room temperature.

Traci's Special White-Choc Raspberry Cookies

¾ cup butter flavored Crisco
1 ¼ cups light brown sugar, firmly packed
2 Tbsp milk
1 Tbsp Raspberry flavoring
1 large egg
1 ¾ cups all purpose flour, sifted
1 tsp. salt
¾ tsp. baking soda
1 ½ cups white chocolate chips
1 cup coarsely chopped macadamia nuts

  1. Heat oven to 375˚

  2. Combine Crisco, brown sugar, milk and flavoring in a large bowl. Beat at medium speed until well blended. Add egg to mixture and blend well.

  3. In a separate bowl, combine flour, salt, and soda. Add into creamed mixture just until blended. Do not overmix. Stir in choc chips and nuts.

  4. Drop rounded tablespoonsfuls onto ungreased cookie sheet covered wtih parchment paper. Bake for 8-11 minutes for a chewy cookie, 11-13 minutes for a crisp cookie. Cool for 2-3 minutes. Remove from cookie sheet to a cooling rack and cool completely. Makes approx. 3 dozen. Enjoy!

Awesome Meatloaf

1 ½ pounds ground beef
½ cup ketchup
⅓ cup V-8 juice
½ tsp salt
½ tsp pepper
⅛ tsp crushed red pepper
2 eggs beaten
1 cup bread crumbs
¼ cup onion
2 tsp mustard

Mix all of these ingredients together. Shape into a loaf, place in baking dish.

Mix together:

½ cup ketchup
1 tsp mustard
4 Tbsp. brown sugar

and pour over the top of the meatloaf. Bake at 400˚ for about 1 hour, until fully done in the center. Remove from oven, carefully pour off any grease, and allow to cool for 20 minutes before serving.
